I made Lemon Raspberry Gummies from a recipe found on this awesome AIP site. They don’t take much time at all to make, and they’re a beautiful vibrant red that seems to warn of the tartness your mouth is about to discover. I’d strongly suggest that whatever molds you use be bite-sized ones, unless you’re the kind of person who used to eat an entire bag of Warheads. These are very gummy and definitely more on the side of a candy substitute than a jello dessert.
I quite liked them but I’m going shopping for a gummy bear mold now!

INGREDIENTS
¾ cup lemon juice
1 cup frozen raspberries
3 tablespoons honey
¼ cup grass-fed gelatin
INSTRUCTIONS
Place lemon juice and raspberries in a blender and blend on high until completely mixed. Pour through a sieve to remove raspberry seeds and then into a saucepan. Add the honey and gelatin and whisk together. You will have a thick paste. Turn the heat on medium, and continue to whisk the mixture for 5-10 minutes, until it becomes thin and everything is incorporated. Take off the heat.
Pour into silicone molds or a small baking dish. Set in the refrigerator for at least 1 hour to firm up.
If you used a small baking dish as a receptacle, cut into bite-size squares.
